    Spread mayo on both slices of bread.

    Add lettuce and a generous amount of the chickpea filling on one slice, top with avocado slices and close.

    Eat as is, or butter the outside and toast on both sides.

Chickpea filling

    Soak the chickpeas in water overnight or for 6-7 hrs, then pressure cook with 1 tsp salt till soft. Short on time? Use canned chickpeas — strain and wash them thoroughly.

    Heat 3 tbsp olive oil and saute finely chopped onions and 3 tsp garlic with turmeric and chilli powder, 3-4 min on low-medium till golden brown.

    Add tomato paste, saute about a minute, then add the chickpeas and coriander powder; mix well.

    Add salt and pepper and simmer 3-4 min. Roughly mash some of the chickpeas so the filling isn't watery or curry-like.

    Squeeze in 1/2 lemon and stir in 1 spoon of honey.
